Wild Rice Spinach Soup; Pressure Cooker

If you have a large pressure cooker, try this most delicious soup, that {as most soups do} gets even more amazing after the first day or so~ IF you have not devoured it all!

You do NOT Have to use a pressure cooker; an old fashioned pan on the stove will do, or a slow cooker or crockpot!!

Into your large pressure cooker, pour 6 cups broth, chicken or vegetable

1 package Wild Rice~ i use the 16 oz. Lundberg Wild Blend

Add one large pkg. frozen, chopped spinach.

optional- add 2 chicken breasts or 4 thighs; they can be totally frozen

One finely chopped onion, or a T. dry onion bits

One-4 finely chopped Garlic cloves, or 1-2 t. dry garlic

1 T. rosemary

Set Pressure Cooker on 30 minutes. When cooled, chop the chicken into small pieces, and add more broth or water as needed~ usually 2-4 cups more. Add salt to taste.
