Oatmeal Dinner Rolls

2 cups boiling water
1 cup organic uncooked oats
3 tablespoons butter

Place oats and butter in water, stir well, and cool to lukewarm.

Dissolve 1/4 oz. yeast (one rounded tablespoon) & 1 tablespoon sugar in 1/3 cup warm water.

Add 1/3 cup brown sugar, 1/2 teaspoon salt, and the cooled butter/oat mixture.

Stir in about 4 cups flour, and turn onto floured counter or board. Knead till smooth and elastic, adding flour as needed.

Place into a greased bowl, cover, and set in warm spot until doubled, about one hour.

Punch down and let rest for about 10 minutes.

Cut dough into two pieces. Roll each half into 9 round balls (or for extra large rolls, make 7 balls). In greased 9 inch cake pan, place one ball in the middle, and arrange the other 8 balls around in a circle. Cover and let rise till doubled.

Place in preheated 375 degrees oven and bake 15-20 minutes, until golden brown.
